Chocolate Sunbutter Overnight Oats

​A quick meal that can be made a night ahead !
Some people may be afraid of eating a 500+ calorie breakfast, we say dig in. This dish will be sure to leave you feeling full, and will likely help you prevent that mid afternoon slump when you go searching for chocolate or caffeine. Balance this breakfast with a lean protein, lots of veggies and complex carbs at lunch and dinner and you've got yourself a sold plan for the week.

  • 2/3 cup oats
  • 1 cup almond milk
  • 1/4 cup sunbutter
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • 2 tablespoons cocoa powder
  • 1 banana sliced
  • 2 tablespoons chocolate chips
  1. Combine all ingredients in a small bowl except for toppings.
  2. Cover and store in refrigerator for at least 8 hours or overnight.
  3. Spoon mixture evenly into bowls or mason jars.
  4. Layer with sliced bananas and top with chocolate chips.
  5. Sprinkle with extra chia seeds if desired.
