The gel-like substance in okra called mucilage, helps bind to cholesterol during digestion, causing it to be excreted in stools vs being absorbed in the body. Blood sugar issues? Okra has been linked to helping improve blood sugar control, but if you are taking metformin there may be a food-drug interaction that should be avoided.
