Pesto Carrot Chard

Do you want a huge serving of vegetables ready in less than 10 minutes?  This is a super flavorful option is a great side to top with a bit of protein! We att this entire recipe as dinner for 1, so much nutrition and flavor.  
If you are unfamiliar with chard it holds its form better than spinach, and is delicate in flavor and one of our favorite cool weather crops.

  • 1 bunch Swiss Chard
  • 1 Carrot
  • 1 tablespoon Olive Oil
  • 1 tablespoon Capers
  • 1 tablespoon Pesto
  1. Wash and slice chard into small pieces.
  2. Keep stems separate from leaves.
  3. Wash and dice carrots into small pieces.
  4. Heat a saute pan and add oil. Cook chard stems and carrots for 5-6 minutes until they begin to get tender.
  5. Add chard leaves and stir to cook.
  6. Add in capers and pesto and mix to combine. Use a little bit of caper juice to moisten pan (about 1 tbsp).
  7. Heat until thoroughly warmed and serve.
